Pork Chops with Roasted Tomatoes

This dish is wonderful with left over grilled pork chops and is easy to make with lots of fresh flavors!
Serves 2

2-grilled or broiled pork chops
1 pint of cherry tomatoes, washed and cut in half
2 tablespoons extra-virgin olive oil
2 tablespoons fresh basil, julienned
Salt & Pepper, to taste
3 tablespoons white wine (optional)

Pre-heat oven to 350 degrees. In a large casserole: add halved cherry tomatoes, drizzle with olive oil, salt and pepper. With a spoon lightly toss tomatoes in olive oil to coat. Roast tomatoes in oven for 20 to 25 minutes. Add fresh, julienned basil to roasted tomatoes and stir. Add wine and grilled pork chops. Spoon tomatoes over pork chops and continue roasting for about 10 more minutes, or until pork chops are heated through. Serve with minted peas or a lovely salad. Enjoy!

    • Robin, it is very easy and I can’t wait to make this with fresh, heirloom tomatoes from my garden. Add fresh herbs, such as basil, sweet majoram and chives!

      • Exactly! (So, I could use my regular heirloom tomatoes instead of cherry tomatoes with this? I’m thinking so…)

      • Any fresh tomato will do, but heirloom tomatoes, with the fresh taste from the garden, would be extra special!

    • That is soooo true! You can NEVER go wrong with simple, good quality ingredients! I can’t wait to make this with heirloom tomatoes!
