Ginger Lime Chicken with Buttermilk Cucumber Dressing
This is a wonderful dish that is easy to prepare ahead of time.
Easy, delicious and full of flavor, this chicken recipe is very healthy and wonderful to serve to family & friends! Enjoy!
Ginger Lime Chicken
3 tablespoons lime juice
2 teaspoons lime zest
2 tablespoons finely grated ginger root
4 cloves of garlic, minced
1 tablespoon sesame oil
1/4 cup tamari sauce
1 tablespoon honey
4- skinless, chicken breasts, or 8- skinless, chicken thighs
In a large glass or ceramic bowl mix all of the ingredients together, except chicken.
Add chicken, making sure you coat both sides of chicken in marinade. Cover and refrigerate for at least 3 hours.
Prepare your grill and add chicken. Grill turning chicken over once and cook until done.
~Cast Iron Griddle/Pan Method~
Preheat a large cast iron pan (my favorite pan in my kitchen), or griddle over medium heat. Coat pan or griddle with 2 teaspoons of olive oil.
Remove chicken from refrigerator and place on hot cast iron griddle and cook about 4 to 6 minutes on one side, turn chicken over and continue cooking 4-6 minutes more.
Serve over a bed of mixed lettuce and drizzle with Buttermilk Cucumber Dressing
~Buttermilk Cucumber Dressing~
3/4 cup buttermilk
1/4 cup sour lean or reduced fat sour cream
1 tablespoon dried dill, or 2 tablespoons fresh dill, minced
1 teaspoon fresh lemon juice
1 tablespoons honey or 1 tablespoon sugar (add more for taste, if needed)
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1/2 cup, finely chopped, seeded, peeled cucumber
In a medium mixing bowl, add all ingredients except cucumbers, stir until smooth.
Add cucumber and stir mixture until well incorporated.
Cover and store in refrigerator at least 30 minutes. Stir before serving.
