2-3 tablespoons olive oil, plus more for drizzling
Kosher salt and freshly ground pepper, to taste
2-3 teaspoons herbs de Provence

Preheat oven to 350 degrees. Rub chicken with 1 tablespoon of olive oil and generously season both sides of chicken with salt and pepper, then rub both sides with herbs de Provence.

In a fry pan over medium-heat, warm the remaining olive oil. Place chicken in pan and brown both sides until nicely brown. Once done roasting, remove from oven, remove lid and cover with aluminum foil, and let stand for 15 minutes. Drizzle with extra olive oil and serve.
