Roasted Chicken with Herbs de Provence~Easy & Delicious!
This is an easy and delicious chicken dish, enhanced by aromatic herbs de Provence. Serve with steamed vegetables or a salad for a lovely dinner to serve family & friends!
Chicken with Herbs de Provence
8 bone-in skin-on chicken thighs or 4 bone-in, skin-on chicken breasts (about 3 pounds total)
2-3 tablespoons olive oil, plus more for drizzling
Kosher salt and freshly ground pepper, to taste
2-3 teaspoons herbs de Provence
Preheat oven to 350 degrees. Rub chicken with 1 tablespoon of olive oil and generously season both sides of chicken with salt and pepper, then rub both sides with herbs de Provence.
In a fry pan over medium-heat, warm the remaining olive oil. Place chicken in pan and brown both sides until nicely brown. Transfer chicken to casserole dish, cover with aluminum foil or lid, and roast for 20-25 minutes. Once done roasting, remove from oven, remove lid and cover with aluminum foil, and let stand for 15 minutes. Drizzle with extra olive oil and serve.
