Crepes with Wild Rice Soup~Meal in a Crepe

Last night, I needed a very quick, hardy dinner and I came up with a ‘meal in a crepe’, covered with chicken wild rice soup (which is gloriously thick) as the sauce. Enjoy!

~Crepes with Wild Rice Soup~
Serves 4

~Meal in a Crepe: Crepe Recipe ~

In a medium sized bowl:
Sift together: 3/4 cup flour, 1/2 teaspoon of salt, 1 teaspoon baking powder

In a large, pourable batter bowl: beat 2 eggs well, add 3/4 cup of 2% skim milk, 1/3 cup cold water. Combine them together with a wire whisk until batter is smooth (a few swift strokes).  Let the batter rest for at least 30 minutes, before preparing crepes.

Prepare crepe filling, while the batter rests.

~To make crepes~
Heat a small non-stick skillet or crepe pan over medium heat, and grease it with a bit of butter. Pour enough batter (about 1/4 cup) to make a 9″-inch crepe and as you pour the batter tilt the pan to create a crepe that is thin and even. Cook until lightly browned and small bubbles form in the middle, and turn crepe over and cook for about 1 more minute. Remove to a plate and add your prepared or cooked fiiling.

Makes about 4 or 5, 9-inch crepes.

~Meal in a Crepe Ingredients~

!/4 pound Swedish Sausage cut into pieces (casing removed)
(You can also make this without meat or add your own)
4-6 large eggs, beaten
1 tablespoon water
1/4 cup diced, purple onion
Salt & Pepper to taste
12-slices, very thinly sliced baby Swiss cheese
Wild Rice Soup

In a medium pan over medium heat, melt 2 tablespoons of butter and add Swedish sausage. With a spatula, chop up sausage into smaller pieces and cook until browned and slightly carmelized. Remove meat from pan to a bowl.

Add purple onions and saute until soft.

Add beaten eggs to onions. Cook scrambled eggs until set and ready to plate. The scrambled eggs will pick up all of the flavor of the sausage and onions, while the color of the eggs may change, it will make for great flavor!

Heat up your wild rice soup mixture, until hot and bubbly and remove from heat.

~Creating a Meal in a Crepe~

Place a crepe on a plate

Add your scrambled eggs and onion mixture and top with some Swedish sausage

Add one slice of baby swiss on top of the sausage

Fold up your crepe and top with two slices of baby Swiss

Spoon wild rice soup over the crepe.

Microwave for 45 seconds to 1 minute to melt Swiss cheese
and serve!
