1 Rotisserie Chicken, 3 Meals: Meal 3~ Chicken Noodle Soup or Italian Chicken Casserole

1 Rotisserie Chicken, 3 Meals:
Meal 3~Chicken Noodle Soup or Italian Chicken Casserole~~ Or Both!

This final meal made from one rotisserie chicken you can create: Chicken Noodle Soup or Italian Chicken Casserole, or both!

~Chicken Noodle Soup~

Homemade Chicken Stock from a Rotisserie Chicken

Diced Chicken, Onion, Carrots, Garlic & Celery

~Ingredients~

Homemade Chicken Stock from a rotisserie chicken

4 Carrots, diced
6 garlic cloves, minced
1 large onion, diced
4 Celery ribs, diced
1 Chicken breast (from rotisserie chicken)- skin removed and diced
2 Chicken thighs  (from rotisserie chicken)- skin and bones removed, diced
One bag, bow tie pasta
1/2 cup White wine-I used Rhine wine (wine is optional, but adds great flavor)
4 tablespoons, freshly grated Parmesan Cheese
1/2 teaspoon dried basil
1/2 teaspoon thyme
1/4 teaspoon sage
1/2 teaspoon summer savory (optional)
3/4 teaspoon salt
1/2- 1  teaspoon pepper (to taste)

Cutting Carrots on the Diagonal

Cutting Celery on the Diagonal

Add into the Homemade Chicken Stock:
Diced chicken, onion, garlic, celery & carrots

Over medium heat add:
1/2 teaspoon dried basil
1/2 teaspoon thyme
1/4 teaspoon sage
1/2 teaspoon summer savory (optional)
Salt & Pepper

Cook chicken and vegetables until tender, about 1  hour. Add bag of bow tie pasta and cook over medium heat, until pasta is done about 8 -10 minutes.  If the soup becomes very thick with pasta,  Add 1/2 cup wine and Parmesan Cheese and simmer for another 3 minutes. Remove from heat and serve! Enjoy!

~Here’s a Bonus Recipe!~

Divide Chicken Noodle Soup into two heavy saucepans

1. Meal: Chicken Noodle Soup
2. Italian Chicken Noodle Casserole

On the left: Homemade Chicken Noodle Soup
(ready to serve)
On the right: Italian Chicken Noodle Casserole

~To make Italian Chicken Noodle Casserole~

Add 6 tablespoons of Parmesan Cheese
1/4 cup of White Wine
2 tablespoons butter

Stir casserole and bake in a preheated oven at 325 degrees for 25 minutes. In a bowl, place a thin slice of buttered foccacia bread on the bottom of bowl and ladle casserole over bread.
