1 Rotisserie Chicken, 3 Meals: Meal 2~Annie’s Chicken Waldorf Salad

The second meal made from one rotisserie chicken is my
Chicken Waldorf Salad

Annie’s Chicken Waldorf Salad
Makes 4 servings


1 chicken breast, skin removed and diced
1 small can mandarin oranges, drained
1 apple diced-skin on
1 celery rib, finely diced
bunch of red grapes , cut in half(about 1 cup)
bunch of green grapes, cut in half (about 1 cup)
1 cup walnuts, toasted (method follows)
Bag of mixed salad greens, washed and dried
1-1 1/2 cup Dressing. to taste

1/2 of Dressing
(recipe follows)
1 cup Hellman’s mayonnaise
1/4 cup sugar
1/4 cup milk
1/2 teaspoon ground celery seed

In a medium bowl, mix all ingredients with a whisk until well blended.

To Make the Salad

Toast Walnuts in a saute skillet, stirring constantly over medium heat, until walnuts give off a nutty aroma, about 4 minutes. Remove from heat.

Assemble ingredients, except mixed salad mix, into a medium bowl.

Add dressing and mix to coat salad well.

Prepare plates with a bed of mixed salad greens, and spoon Chicken Waldorf salad in center of salad greens.
