One Rotisserie Chicken~ 3 Meals: Meal One

~Meal One: Lunch~

Chicken and Annie’s Improved Tequilaberry’s Salad~
Serves 1 or 2

Carve 1 Rotisserie Chicken into:
2 legs
2 wings
2 breasts
2 thighs
Remember: Keep the carcass!

For Lunch: serve 1 leg and 1 wing per person.

Salad Ingredients
1 medium bag of coleslaw
4-6 pieces of bacon, cooked or baked-diced
Hellman’s Mayonaise
Ground celery seed
Whole Milk
Parmesan Cheese (from a triangle of cheese, not from green canisters)

Salad Fixins’

Salad Dressing

In a medium-sized bowl, add the following ingredients together:
1 cup of Hellman’s mayonnaise
1/4 cup sugar
1/4 cup milk
1/2 teaspoon ground celery seed

(Note: You’ll be using 1/2 of the dressing for this salad, and remainder for another.)

Whisk the ingredients together, until smooth.

Dice the bacon

Never Buy Shredded Parmesan Cheese Again!

Remove plastic from a triangle of cheese and cut up into small cubes
Place into a food processor with chopping blade
Pulse until cubes are finely chopped

Assemble the salad right before serving.

Mix together in a medium bowl:
1/3-1/2 cup grated Parmesan Cheese, to taste
Diced Bacon
1/2 of the Salad Dressing
(add extra dressing,  if you need more to coat the salad)
