Rotisserie Chicken: When You Don’t Have Time To Cook

How can you have a nice, hot cooked meal on busy days when you don’t have time to cook?

Rotisserie chicken makes a lovely meal for a family of 4 on busy days, when you don’t have time to cook or roast a chicken. Add a nice salad and you can have a hearty meal for your family or friends. Wondering how to carve a chicken?

How To:
Making a flavorful chicken stock, from a rotisserie chicken carcass

Remember to keep the chicken carcass after you’ve removed the meat..In a large stock pot:

Chicken Stock from a Rotisserie Chicken

Rough Chopped Vegetables:
2 large onions
3 cloves of garlic
3 large carrots
3 ribs of celery

Place chicken carcass, rough cut vegetables and enough water to completely cover the chicken carcass in a large stock pot and heat on low until it begins simmering. Add 1-2 teaspoons of salt, 3/4 teaspoons of pepper, 1/2 teaspoons each: sage & thyme.

Simmer slowly for 2 hours and remove from heat. Strain stock and discard vegetables and chicken carcass. Freeze stock or use immediately in making chicken soup from leftover meat from the rotisserie chicken.
