This recipe makes 3-5 “bowl” servings or 4-6 “cup” servings.


2 cloves of finely minced garlic
1 finely chopped medium onion
¼ of a large red bell pepper, finely chopped
2 small chicken bouillon cubes
1 ½ cups of boiling water
2 15 ounce cans of un-drained black beans
½ teaspoon of salt
½ teaspoon of cumin
Juice from half a lemon
1 ½ tablespoons of corn starch


Add in a pot the onion, garlic, bell pepper, chicken bouillon, and water and leave simmering for 10-12 minutes.

Add only HALF a can of beans to the pot along with the salt and cumin and simmer for another 5 minutes

Then take the soup so far and puree it using a blender

Then add the rest of the beans, the cornstarch, and the lemon juice and cook until thickened to your liking. Goes great with an apple or a pear to balance out the savory flavors! Perfect for a relaxed afternoon or a rainy day.
