This is a great casserole to make ahead time and freeze. You can add as much heat as you prefer and have a great meal ready in no time.
Makes one casserole: 8” x 12” and serves 6
Makes second casserole: 8″ x 8″ and serves 4
Large flour tortillas
2 jars Newman’s Own Salsa (your choice of ‘heat’)
2 jars Newman’s Own-Pineapple Salsa
1 package of Trader Joe’s Multigrain Pilaf or 1 cup cooked black beans
1 package shredded Mexican 3-cheese blend
1 pound ground chuck or vegetarian Morningstar Farms products
1 large onion, diced
1 rib of celery, diced
1 green pepper, diced
2 tablespoons, chili powder
1 1/2 tablespoons, smoked sweet Hungarian paprika
1 teaspoon unsweetened cocoa
1 teaspoon fresh ground, black pepper
½ teaspoon salt
¾ teaspoon celery salt
2 teaspoons ground cumin
Green chilies, diced (optional)
Casserole one: 8″ x 8″
Casserole two: 8″x 12″
Pour enough Newman’s Own Salsa on the bottom of casseroles to coat and prevent sticking.
In a large, heavy skillet:
Over medium heat: saute onions, celery and green peppers, until onions are translucent.
Add ground chuck and cook until browned. Next add: chili powder, paprika, cocoa, black pepper, salt, celery salt and cumin to meat mixture Continue cooking about 5 minutes to incorporate spices. Add one jar of Newman’s Own Salsa and 1 package of Trader Joe’s Multigrain Pilaf. Stir mixture until blended together. Remove from heat.
To assemble enchiladas:
In Teflon pan, on low heat: warm one tortilla at a time, and remove once warmed to a plate.
1. One large spoonful (about 2 tablespoons) of sour cream spread down the center of tortilla.
2. Next add 3-4 tablespoons meat mixture, and place on top of sour cream.
3. Sprinkle 3 cheese blend (1-2 tablespoons) on top of meat mixture.
4. Fold sides and then ends, into the center of tortilla.
5. Place seam down in prepared casserole dish.
Top casseroles with 3 cheese blend, and next pour Pineapple Salsa over casseroles.
Bake in oven at 350 degrees for 30 minutes. Serve with a dollop of sour cream, a sprinkle of 3 cheese blend and salsa. Add a salad and you have a nice meal to serve to family or friends.
