Recipe: Triple Peanut Butter Cookies
I had this Peanut Butter Cookie recipe that uses of peanut flour. Yesterday, doing my ‘blizzard shopping’ at Trader Joe’s I found peanut flour, and decided to make Triple Peanut Butter Cookies. Here’s the recipe and a picture will be following…A good peanut butter cookie, coffee or tea~bliss!
Triple Peanut Butter Cookies
1 1/4 cups packed light brown sugar
1 cup all-natural peanut butter (creamy or chunky)
2 large eggs
1 cup peanut flour
1/4 cup chopped, roasted peanuts
1 teaspoon baking soda
1 teaspoon pure, vanilla extract
1/8 teaspoon salt
Preheat oven to 350 degrees. In a medium bowl, beat together brown sugar and peanut butter with a hand mixer. Beat in 1 egg at a time, mixing well after each addition. Mix together peanut flour, peanuts, baking soda, vanilla and salt and add to brown sugar/peanut butter mixture. Mix well until well blended.
Roll dough into 1 1/2 -balls. Place 2-inches apart on a cookie or baking sheet lined with parchment paper. Using a fork, flatten cookies to about 1/2-inches thick and make crisscross marks on the tops of cookies.
Bake 10 minutes or until cookies are just set. Transfer cookies (still on parchment paper) to a wire cooling tack; cool completely. Cookies will firm up as they cool.
