Annie’s Balsamic Strawberry Dessert Crepes

Annie’s Balsamic Strawberry Dessert Crepe is an elegant and easy dessert you can prepare ahead of time, and make for your family or guests. Inspiration for this crepe was from the Balsamic Vinegar article in Kowalski’s online newsletter.

Annie’s Balsamic Strawberry Crepe Recipe

In a medium bowl sift together:

3/4 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
2 tablespoons powdered sugar

In another medium bowl:

Beat 2 eggs and add:

2/3 cup milk
1/3 cup water
1/2 teaspoon vanilla
1/2 teaspoon grated lemon rind

Make a well in the dry ingredients, and pour in the liquid ingredients. With a whisk, combine and mix them together with 5 or 6 strokes (don’t worry if there are lumps). Cover with plastic wrap, and allow the batter to rest for at least 30 minutes; or refrigerate  up to 3 to 6 hours (allow to come to room temperature, and stir batter~before making crepes.) This is a great time saver!

Over medium heat, grease a non-stick skillet or crepe pan with 1 teaspoon melted butter. Add a small quantity of batter and let it spread over the bottom of the pan. When it is brown on the bottom, carefully flip it over to lightly brown on the other side.

Balsamic Strawberry Filling

3 cups of washed, thinly sliced strawberries
1/3-1/2 cup sugar (depending on the sweetness of the berries)
2 tablespoons balsamic vinegar
1/8 teaspoon of fresh, black pepper

Mix above ingredients in a medium glass bowl, and sit at room temperature for at least 45 minutes. The sumptuously flavored juice from the strawberries, balsamic vinegar and sugar creates a wonderful  sauce you can spoon over crepes, adding to the layer of flavors! You can make this ahead, cover with plastic wrap, and later…remove from the refrigerator, Allow the strawberry mixture to warm slightly,  when making crepes.

To Create Strawberry Balsamic Crepe Dessert

Strawberry Mixture
Vanilla Ice Cream
Whipped  Cream
Balsamic Vinegar

Place on crepe on a plate and spread several tablespoons of strawberry mixture down the center of the crepe. Fold crepe in half and spoon the strawberry juice over each crepe and add a scoop of ice cream over top of crepe or whipped cream. Top with a drizzle of balsamic vinegar, or a spoonful of the strawberry mixture. For more decadence, add shaved dark chocolate over the whipped cream.
