Recipe: Annie’s Summer Waldorf Salad

Annie’s Summer Waldorf Salad
In a large bowl, assemble salad ingredients:
2 red Delicious apples, unpeeled, cored and diced (sprinkle with lemon juice)
2 Granny Smith apples, unpeeled, cored and diced (sprinkle with lemon juice)
2 cups green or red grapes, sliced in half
1 cup celery, finely diced
¼ cup almonds (toasted and sliced) or whole pecans, toasted
¼ cup dried cranberries
¼ cup raisins
½ lemon; squeeze juice over the apples in the bowl, to prevent browning.
1 cup Miracle Whip mayonnaise
¼ cup sugar
¾ teaspoon celery seed
¼ cup milk (more or less, to obtain desired consistency)
Mix ingredients together, and let stand for 15 minutes at room temperature. You can make this dressing ahead of time and store it in the refrigerator.
To Make the Salad
In a large bowl, assemble all of the salad ingredients. Pour dressing over the ingredients and lightly mix to coat. Serves 2 large portions, or 4 side salads.
